Basically, the alkaline diet is opposite the high protein, high fat, low carb diets that are currently in style. Most people have never heard of alkaline-acid balance, but many holistic doctors and nutritionists consider a properly balanced diet to be important to optimal health and preventing diseases such as cancer.

The theory behind an alkaline diet is that because our body's pH level is slightly alkaline, with a normal range of 7.36 to 7.44, our diet should reflect this and also be slightly alkaline. An imbalanced diet high in acidic foods such as animal protein, sugar, caffeine, and processed foods tends to disrupt this balance. It can deplete the body of alkaline minerals such as sodium, potassium, magnesium, and calcium, making people prone to chronic and degenerative disease.  For instance, caffeine is highly acidic and one of the main catalysts of any cysts, sores or cankers of the body.  Unfortunately refined chocolate is also up there in the highly acidic chart. Most people do well just to eliminate caffeine from their diet period. Some people need to go a step further with alkalizing their bodies.

Edgar Cayce, (1877-1945) one of the world's most known God gifted healer's, was very much aware of the caveat's of a high acid diet even before fast food restaurants and highly processed foods appeared in main stream America.  Cayce was very much against fried foods, for example, because it changed the molecular structure designed for humans to consume.  Cayce felt 80% of our diet should be from alkaline foods as well as interesting enough, local foods to the region of the patient. 

Cayce actually said "an almond a day will keep the Doctor away."  The gift of Edgar Cayce is definitely a topic of it's own and worth reading.  We suggest the Edgar Cayce Foundation owned by his family.   There are too many books in agreement, but with their own spin.  Edgar was a randomly selected research paper in college for Mabel some 20 years ago.  Highly skeptical at the start, her paper and research supported he was a divinely gifted man and it dramatically changed the way she looked at food and health.

Who is this diet for?
This diet is for people who feel unwell on a high fat, low carb diet. It is also for people lead stressful lives and who consume large amounts of acidifying foods such as protein, sugar, processed food, cereals, starches, and caffeine, with little alkalinizing vegetables.
